is there a way to increase the throttle response on a mk6 gti?

I assume you already did the throttle body adaptation. There is no way to increase throttle response on the MK6 GTI unless you did a tune such as Eurodyne, GIAC, Unitronic, Revo, etc. The throttle "delay" is intentional by design, and would need a tune to overide that. You can use piggy-back solutions like "pedal-box" or "pedal-commander", but that only creates unnecessary fault codes.
