I have managed to find out why my golf was so unstable and sensitive. the power steering is excessively soft. I have modified the value of the assistance to 40% and the improvement is remarkable. my problem is that after stopping, the value returns to 100% automatically and forces me to use obdeleven again.

Hopefully somebody who knows can answer but I have seen this sort of behavior before, I set the power steering to work with engine off, worked fine but as soon as you recycle the ignition it goes back to stock settings.
This is how VW Have set it up I suspect.

This is how VW Have set it up I suspect. the rest of the parameters like driving in a straight line, if that keeps them. also try what you say and it is true that it is reset. I think that if I can not solve it I will have to go to the vw workshop, it must be a factory problem because I think it is dangerous to drive with the steering wheel so sensitive.
