You can have a failing mechatronic unit. How does the car behave when driving in D (with the paddles)? How does it shift in Sport mode (no paddles) [does it upshift automatically as soon as it hits the redline]? If you had VCDS, you could log a large number of variables such as clamping torque of the clutches. I'd recommend you invest in getting your DSG reflashed for quicker shifts. My MK5 GTI will sometimes delay a manual upshift by about the same 2 seconds if my boost pressure falls even though I'm at Wide-open-throttle (I had a boost leak back then).

DSG shifting can also be sluggish if the oil filter is over due a service my mk5 R32 was so much better after DSG service

DSG shifting can also be sluggish if the oil filter is over due a service my mk5 R32 was so much better after DSG service 2 sec Delay is normal from Paddle shifters on wheel as the connection is wireless and that is recommended processing delay. Having said that it is not always, but is usually. There shouldn’t be a delay from gate lever. Check of shift as mentioned in earlier post.

Delay is normal from Paddle shifters on wheel as the connection is wireless I disagree. There is a wired connection for this. I've experienced an MK6 with a DSG swapped from a different market which had a 3-second delay in downshifting. This required the flash of another "stock" firmware from another DSG variant to resolve it.
