My car doesn’t have the button for this, is it possible to enable the options and control from the media screen?

partial answer, just seen this on the facelift golf forum Permanent driving mode engine assistance selection (for those who don't have the driving profile button and wants sport mode) Control Unit 44 - Steering Assistance Adaptation Characteristic curve of steering assistance Default = normal Comfort = eco Dynamic = sport Automatic = ? (Never tried) Driving profile selection button = normal - switch with button - default value Read more: forum.obdeleven.com/thread/1928/golf-mk7-facelift-mods?page=9#ixzz5HrUprN1hmy response was hydro, on my coding sheet I have the following narrative "The second channel provides a permanent change, but the allowable values are automatic/dynamic/comfort (from memory - I think). So, the effect of altering this channel is the same as selecting the driver mode, but the setting is applied (for steering only) regardless of the mode set by the button" So (and i cant find the original post where I got this from) i presume this only being applied to the steering not the whole car setup. Happy to be proved wrong.
Update - This was from a pre facelift coding sheet but as its being applied to the steering module not sure this has changed on facelift cars.

Thanks will take a look at this and monitor the golf one for additional info. I did find a long winded thread elsewhere about enabling Audi Drive Select which may be similar, has to enable quite a few settings on long coding across a few modules, guess Seat / VW could be the same?

It will be, the whole point of drive profile on my cupra and on the golf is it changes lots of settings with one button push.
So I can have comfort mode or I can go to full cupra mode with changes to the A/C, Steering, Dampers, Throttle Response, Gearbox change points etc so there would be a lot of stuff to change, in this coding it will stay in this mode not sure if that would apply to all the control units.
You would also need to double check if you have all the required components
