Most of the coding id like to do begin by me going into “access control 2” but I don’t have that. What is the comparable screen to go onto? I found it with the convenience windows, it was under ZV Komfort.

The ecu's in a mk7.5 are differently coded, so either look to see if anyone else has done it, or see if you can find what you want by translating the German to find the coding you want to change

Since the convenience windows were in ZV Komfort, do you think this may be as well?

Doesn't rain closing only work if you leave your windows open when you've left the car?
Go into Module 09 Central Electronics Go into Security, enter security code. Select Adaptations, and then ZV Komfort Select Regenschliessen_ain_aus, toggle to Active. Then select Regenschliessen_art, toggle to Active. Finally select Menusteuerung Regenschliessen, toggle to Active.
This enables Automatic closing in rain as a menu option under Window Operation but not actually tried it myself

This is just looking at the mk7 coding and finding it in the mk7.5's
Also looking at rain closing there look like there's long coding need to be done

No need to learn German, googles your friend,
One hex digit is a nibble which is half a byte, so 2 hex digits are a byte, and one hex digit is 0 to F and in binary goes from 00000000 to 11111111,
