Hello I am from the USA with a mk7 GTI. I had just recently removed NAR restrictions on my headlights. I am confused on whether my car should be set to left traffic or right traffic if I am in the states. Attachments:

Clearly my knowledge of "Yankee" model Golfs is limited because I happen to live in the very, very deep South!! .
However, I assume that when you say "I had just recently removed NAR restrictions on my headlights", you mean that you changed the channel setting in the central electrics module and you altered the long-code string on the Headlight regulation module (and you reset the car's understanding of horizonal -level via Basic settings)
If so, then what you did was remove the crazy restrictions that your local Department of Transport (DoT) regulations impose on cars that are sold in the North America market - like the limit to not illuminate more than 4 x lamps on headlight fittings at any time! I intend no offense in using the adjective "crazy" - but try as I have, I simply can NOT understand the purpose of many of your DoT rules (they make absolutely NO sense - to this Antipodean)
So, the removal of NAR restrictions has nothing to do with the car's drive-side - they are solely about the DoT lighting rules. Leave the setting in your picture on the "left-side".

Ah I see! I know they are separate things. I was looking at the different settings but the wording was confusing. So left hand traffic means oncoming traffic is on the left rather than you driving on the left side of the road? I did not remember which it was on initially!

hmm......... no, not really!
The terms left/tight hand drive refer to the car - not to the "coming traffic"! So, left hand drive means exactly what the words say about the car. For example, sit in a car - if the steering wheel is on the left-side of the vehicle, the driver sits on the left-side and therefore the vehicle has left hand drive! That said, you are correct that countries that have left hand drive cars also have the "coming traffic" on the left-side. However, these countries also allow right hand drive cars (like those used in Australia). So, right hand drive cars can be used in countries where the "coming traffic" is on the left-side (albeit these cars will be in the minority). That's why the term isn't about the "coming traffic"

Just got a VW California in UK right hand drive with High Beam assist and checked settings, Steering was set to left hand drive, changed that to right. Left-/right hand driving this is set currently to left, just checking I change this to 'Right Hand Driving' same as Australia !

kp55 : Hi. I suggest that you refer to the owner's manual - you should read that changing the drive-side setting is intended as a short term thing only.
Fact is that the cut-off characteristics of the headlight fittings are different depending on the drive side of the car. This is part of the physical design of the reflectors in the lamp positions and it can NOT be changed with a setting in the MENU.
