Hello!
I've recently purchased a mk8 gti and have noticed the infotainment system varient in Australia is quite different to the eu / us cars. This includes the au models not having access to the inbuild app store, Traffic Sign Reconigantion as well as some other features.
Is it possible to change my infotainment system to say the eu / us version? If so how would i do it?

We don’t get the shop and we connect apps here in the US either

We don't get those features in Canada either.
Although I cannot say "for sure", I doubt that simply changing the country code in the vehicle would give you access to the online features you are seeking. If you were to somehow manage to connect to the VW server (very doubtful), the server would recognize your VIN as not being sold in Europe, and you would not get any further. That much I know from trying to log into VW Europe websites (using a computer browser) with my Canadian VIN.
In past years, changing the country coded into the instrument cluster controller only resulted in activating or de-activating certain default characteristics required by law in different countries, for example, DRL behaviour, seatbelt chime behaviour, what type of icon was shown to depict certain features such as cruise control turned on, and stuff like that.
