Adapted instructions for ambient lighting menu in mk7 Golf family cars(link for user VWJAP instructions) for Taos. This allows specific designation of one color for both the cockpit and headunit, and you can assign 10 different colors to be switched from an ambient lighting menu in the car settings list.
NOTE: These instructions are for Taos with larger radio/glass touchscreen, in USA this is Taos SE and SEL. But SEL already has menu enabled so really only relevant for Taos SE. I have activated same menu in Jetta/Taos S with 6.5" screen, and will update this post with those instructions as well. Believe these same instructions should apply to Tiguan with 8" screen, and Atlas with 8" screen.
Start> 09 Central Electrics
Make Sure SFD is unlocked (hood open)
Security Access Code is entered
>Adaptations
Search 'int.' and 'Int. light, 2nd generation' will show
Search or locate Instrumententafelbeleuchtung mehrfarbig
Switch from 'Not Active' to 'ACTIVE'
WRITE
NOTE: if you get Function not available, go back to 09 Cent. Elec. and confirm Security Access/SFD Unlock.

Search 'interior light' and select 'interior light, light configuration'
Search or locate 'Ambientemenue mit alle zonen', and set to 'ACTIVE'
WRITE

SFD Unlock just in case cause its annoying if you load 30 values in just for a 'function not available'.

Return to 'Interior Light, Light Configuration'
Search or Locate 'ambient_farbliste_hmi' and set to 'ACTIVE'

Search or locate 'Ambient light color list'
This list represents the 10 colors on your ambient lighting list. Rotwert (R), Gruenwert (G), Blauwert (B). You can use RGB color codes to assign which colors you want. You do not need all 10, and can write with just 3, 6, etc and it will show those only. Do believe there is way to convert to 30 color as well, but that's a topic for another time.
Once you have all colors assigned,
WRITE.
Then RESET the headunit using power button hold down. At this point on boot you should go Car>Settings>Ambient Lighting and see your colors present.
