Hey all, got gifted an OBDeleven for Christmas and I'm just digging into it. Was scrolling through all the adaptations and honestly wasn't sure what some of them did. Is there a master list with photo/video examples of what they do?

No because all cars have different modules/hardware/software and all cars have different options set up from factory,
Just because some mods work on a 2017 they may not be available on a 2016 and will have a different module than a 2014,
So not as simple as one list for all

But what does that have to do with the list of adaptations? The list is the same whether the car has the right setup or not. Honestly I'd expect it to actually separate them by whether the car can even do them or not based on currently installed equipment (with the option to adjust what is/is not installed.)
Some of the adaptations just don't adequately show/explain what it will do. For example: Dashboard theme - change vehicle dashboard theme from standard to carbon or vice versa. What does standard look like? What does carbon look like? How can I know which one I currently have?

So let’s take the “carbon theme” Now if you have standard dials with a colour mfd then without carbon it’s just black background, and with carbon it gives the background a pattern that looks like carbon Now if you have standard dials with the white MFD then carbon theme won’t do anything at all Now if you have the AID (digital dash) it adds like little balls to the background that kinda bounce when you move from one screen to the next, plus also changes the line colour from blue (or red if it’s a gti) to gold, and it’s called a anniversary theme Now all the different hardwares/modules to all the different cars are only kept in one place, which are VW servers in Germany and as far as I’m aware the only way to access them is by the official VW service software called Odis, and the only info that 3rd party software can get from VIN numbers is make and model and some trim levels (like match, gt, gti, r, etc) so you won’t get a list of mods just for your car, it would be a generic list for cars that are around the age of your car (and some cars the software may have changed during the year so you may have a list that is not supported by your car because the mods were for a early/late model)
Now as for what the mods do, I’d say like with anything else in life you need to do your homework so you don’t end up damaging anything
