If I do a coding today, will my car dealer see tomorrow, if I take the car to the workshop, that I did that specific coding on that date?
Or, is there a way to delete the history of changes, keeping them active, before going to the car dealership?

You have not told us what car you are doing the coding on.
If its a newer car with SFD Protection then (if they want to) they can see that you have asked permission to access the control unit.
If they want to they can compare your setup vs the factory setup and spot any changes (assuming you have not rolled them back to stock)
On older cars (not sure about newer ones) changes will leave a workshop number on the car, by default OBD11 Sets this to 00000 from memory so they will be able to see you have made a change.
Again on newer cars I am seeing many people making changes then going back to dealer to have a software update and wiping all changes out.
I dont know for sure but I seem to recall they can (if they want to) see that you have made changes but generally (US Being an exception) they dont seem to fussed these day unless its a warranty claim and they suspect you have been making changes (but again SFD Protected cars they can see easily)
