Hello, dv52 (Australia) here I show the liters that the car needs to fill, and I show the receipt that the gas station gave me. There is a difference of 5.46l, does anyone know how I can adjust, calibrate, my car so that it reads those 5l and something, and is more accurate? Or should I not touch anything and leave it like that? Thanks.

Yes, your calculated difference between the fuel-gauge reading and the actual space in the tank is normal.
The fuel tank capacities on a Golf mk7 varies according to the factory build options - like this:
- Petrol and diesel engines with front-wheel drive = approx. 50 l, of which approx. 5 l reserve.
- Petrol and diesel engines with four-wheel drive = approx. 55 l, of which approx. 6 l reserve.
- E85 MultiFuel engine = approx. 50 l, of which approx. 5 l reserve.
Although I've not seen any formal explanation as to why the measured quantity always under-reads - my hunch is that the unfilled-space number excludes the reserve capacity. Again, this is a guess based entirely on similarity in numbers. If I'm correct, I have no idea why this is done
I'm not aware of any way to correct the reading to exclude the reverse quantity - happy to be told how to do this by a more informed forum colleague

If I remember correctly the manual says that the reserve amount is extra, but it will differ and is not guaranteed in any way.
I see no chance here. The fuel level is measured by a single swimming element, which is normalized (made slow on purpose) so it does not swing around on every maneuver or incline.
Another gauge to measure is the fuel pumps/injectors throughput as used for the consumed fuel per 100km - but this is also off according to most people and has no valid calibration points for full and empty
And last but not least: The minimum refuel quantity is made for countries where you have to pay a certain amount of fuel before pumping. So you go to the booth, tell them you want to pump 20 liters at point 4, pay and you get exactly that amount out of the pump. Needed less than announced? Well, thank you for your money... Thats why this is very conservative, to make 100% sure the displayed fuel quantity is fillable
