When in my pocket, I often accidentally trip the panic button. I found reference that on an MK7 you could code the delay to be longer hold of the button. On the mk8, are there any options to fully disable or just increase the delay? I may end up getting a fob cover but that just seems like an annoying way to solve the problem as it will make the key larger and not look as nice.

Panic button ? Can you please detail this ? My FOB has only 3 buttons: Open / trunk / Close and the "side" button is actually a mechanical thing that pops out the real key in order to open door when battery is dead.
LE: I think that button comes with the OEM alarm, right ?

In North America, the key fob has a 4th button on it called a 'panic button' which activates the theft alarm function (horn, lights) when pressed.
There is no way to disable this via software, but it is quite easy to physically disable it. Just disassemble the key fob and either put a tiny piece of plastic between the electrical contacts for this button (if that is the design of your key fob) or remove the little nub from the underside of the rubber membrane, directly under the panic button. Either of those solutions will ensure that if the button is pressed, no signal is transmitted.

Anyone know where to get to the setting in the OBDeleven app to disable this? I know it's possible because I did it on my 2022 GTI a while ago, but I can't for the life of me remember under which module it was and I can't seem to find it anymore. I want to do the same thing on my R.
