oarthus I am afraid there is no how to document, like the rest of us you have to play around and have a look.
However I can give some brief help that hopefully will make some more sence of the app.
Firstly I presume you know how to connect your phone to the app
Having connected to the car you are now able to do a scan (in simple terms the app will check to make sure there are no errors showing in any of your modules
check out
obdeleven.proboards.com/thread/105/faults and
obdeleven.proboards.com/thread/1783/fix-error-codes to give you some help.
This part of the app is to ensure there are no issues with the car but does nothing to change any values.
Now you get into the Pro part of the app.
Firstly to explain about the setup of the various parts of the VW Group have created a number of different Control Modules (each model / variant can be different)
So when you take the menu option from the Scan screen you will see all the Control Modules that are active in your car and if there are no errors a green light or Red Light if there are errors.
Full list of modules with ones on my 2014 Cupra highlighted in Blue just so you can see how many different setups there are across the years/range.

1/ Admin Part
The Info Screen for you car will show you the engine details (which it picks up from database) but you can add all the Extras you have in the Equipment section and add your own picture and name details full details can be found in this posting
obdeleven.proboards.com/post/6919
Links to other resources can be found here obdeleven.proboards.com/thread/1623/links-odbeleven-resources
The History screen will show you all the changes you have made to your car via OBD11 read here obdeleven.proboards.com/thread/97/history but make sure you go through all the screens as there is more info further on.
2/ Making Changes
So you want to make some changes to your car - go check out the APPS section of your car and you will see all the items that an app can do for you, the apps cost you credits which you can get for free check out this page obdeleven.proboards.com/thread/1935/credit-system or if you dont have enough you can buy more credits (bottom of the article)
Or you can do manual changes check out the list in my signature or obdeleven.proboards.com/thread/764/coding-adaptations or google for coding changes using OBD11, VCDS or VAGCOM and of course youtube but you will find more for the GOLF MK7 to help you out.
Example of a change you could make:
Folding mirrors with a touch control Does not work on MY17 Cars see here obdeleven.proboards.com/thread/1152/touch-folding-mirrors
With this mod, mirrors will fold without having to be continually pressing the button on the remote.
1 - Module 09 - Electronic. Code (31347) So in English you will select control 09 and it will give you a list of options. Some changes require a security code to be entered (31347 in this case) you will get a popup box just enter the number.
2 - Adaptation From the list select Adaption (which as its name implies allows you to use the adaption part of the system (there are others but you may get to that later))
3 - Select - Control Access 2 Some cars this is Access Control 2 From the Adaption menu you will again have options so select Control Access 2 (you can search for these)
4 - Sub - Funk modus spiegelaklappung Some cars this is Funk Spiegelanklappung Modus That in turn will bring up another list and here you will search for one of these names.
5 - Change value By command via remote control look key Some cars this is by look command via remote control key Having found the name you then select and change the option as described here.
Having done all that you then have a green tick box (bottom right of the scree) select that and the change will be saved or if there is a problem then error message show.
3/ Backups
i would strongly recommend you do backups of each of your modules check out obdeleven.proboards.com/thread/1382/backup
Hope that helps but like the rest of us just read, ask questions and check out youtube, most video are against Golf but it will show you how stuff works..
