Is there a way to have both GTI (dial) and R (line) style cockpit views to change between them? Is it possible to disable a few of the screens in the View mode? There are a few that I never use.

Yes it's possible to enable and disable them. You can disable the ones you don't use.
Use the search function.

I have read through every thread on MK8 and didn’t find the information I am looking for.
Since you apparently know maybe you could enlighten all of us as to how to do it or share a link.
I tried the search and came up empty.
