My MK7.5 1,5 TSI 150 Highline only has Eco, Comfort, Normal and Sport mode.
Is it possible to add Individual mode somehow? (I have a Pro Plan)

Do you have a dedicated button for the driving profiles next to gear selection?
In that case you should find the individual profile as you are having the actual driving profiles.
Or are you just going into Car -> Setup -> Assistance -> ACC?
In that case, you can only set the ACC to a specific driving strategy, so no actual driving profile installed.
For a retrofit of driving profiles, it is mandatory to have:
The hardware switch installed
A enablement document by VW
Somebody with ODIS and GeKo to enable it
(Only applies to some models)
