My car is 2019 GTI Rabbit Edition It has the auto-touch handles to lock and unlock (~kessy?)
I'd like the windows to just roll up by themselves when I lock the car.

I think this is what you want; it works perfectly on my UK 2019 7.5R Down: hand inside handle, thumb on dimple Up: thumb on dimple Select one or all windows in Car Settings
(09) Central Electrics -- Access Code 31347 -- Adaptation
Keyless access and start authorization -- Kessy Komfort oeffnen -- not active => active
ZV Komfort -- Comfort opening -- not active => active

I don't know what that would be. I can only think of windows up/down while locking/unlocking the door. Either by pressing the handle dimple as above, or by holding down the lock/unlock button on the remote. Perhaps he'll explain further.

In the polo you can set it so you push the lock button (not hold it) and the windows close
