2019 GTI Rabbit edition (analog gauges):
The fuel gauge, like on many cars, reads full until perhaps 50 miles, when I've burned through 2 gallons already. It's only an ~11 gallon tank.
When it's "1/2 full", I can fill it with 7 gallons. I don't think it's a hardware issue, as my previous GTI and my daughter's Golf behave exactly the same way.

Here's how to make your gauge read more accurately:
17 - Dashboard: Long Coding Tank Characteristic Curve Set to Version 3
I tested this by running the tank down to indicated 1/2 full and then filled it up. It then took almost exactly 1/2 the tank's capacity.

If I understand what they do, they control how the car uses data from the fuel level sensor(s) in the tank to set the gas gauge.
It's actually kind of fun to watch the gauge move when changing the setting. When I changed it from 2 -> 3 the gauge moved down a little, and then back up when changing it back.
I suspect that all MK7's are the same in this regard, except possibly R's, as I think they have a different size/shape tank to handle real wheel drive components. But they may have the same issue where the gauge is optimistic and have a similar fix.
