Does anyone know a way to recode the voice symbol on the steering wheel so it’s programmable or would be possible to make an app so a limited number of options can be selected?

hmmm........... AFAIK (and I'm happy to be told otherwise), Voice-Control is a pre-programmed facility in the module firmware. It can't be changed, or modified by an App in a similar way to changing adaptation channels, or long-code
And even if someone outside VW knows the exact memory locations in the module and the sub-routine details for each of the individual voice commands - OBD11 can't be used to make the necessary changes.

Thanks for taking the time to reply.
Just to be clear, when I say a few select options I meant other functions, like maybe driving mode or another switches function, not related to voice commands - but it seems like the answer would still be not possible anyway.
