Following coding is the same as the other MQBEvo platform cars (seat leon mk4) and thanks to contributors given there, Please note you must have the bonnet open for coding to work.
I have created a separate thread but FYI Launch Control counter is shown on VCDS But currently not on OBD11.
1/ To disable the stupid overtaking on the right do the following
Select Control Unit 13 - Adaptive Cruise Control
Select Long Coding using option 0
Select Overtaking_right_prevention (it was the 19th item on my list)
Change value from activated to Deactivated
If you are required to enter a Security code then use 20103
If you make the change above you will notice your Long coding string will change so just share the bit/byte so people can do it that way if they want.
Please note this control unit is not currently protected by SFD.
2/ Lane Assist Point Of Intervention:
- Select Module A5 (Driver Assistance) ->
- Select Long Coding ->
- Select Point Of Intervention ->
- Set To Early
3/ Lane Assist Warnings:
- Select Module A5 (Driver Assistance)
- Select Long Coding
- Select Lane Assist Off Text
- Change to Set To Disabled
4/ Lane Assist Settings:
- Select Module A5 (Driver Assistance) ->
- Select Long Coding ->
- Select Configuration For Lane Departure Warning K15 ->
- Set To Last Setting

Saves the last temperature of the Heated seats
With this mod, the temperature set in the last instance in the seats will be saved for when you start the car again.

3 - Retention of driver's seat heater level - Default set to Active for 10 Minutes can be changed to Not Active or Active
4 - Retention of frt.pass. seat heater level - Default set to Active for 10 Minutes can be changed to Not Active or Active
Activate memory function Aircare - dont know if this is fitted to the Cupra

Change value to Active.
Automatic activation for windscreen de-icing
on the only example I have this was already set.
With this mod, when starting the car if the cold conditions are adequate, the air conditioner will start blowing to the windshield by default to defrost it.
