My understanding of this from VCDS is like an overdrive feature that makes it reach the cooler temperature faster. I keep getting an error when I try to set the feature, as I guess other prerequisites aren't met. Did you know setting your temperature to the lowest setting actually sets your HVAC compressor to remain permanently engaged even when the desired temperature is reached. It doesn't even temporarily disengage if you need to to do a downshift or overtake at wide-open-throttle. Your fuel economy suffers significantly as a result.

As for the second diagram, MY understanding is that this is the characteristic of the desired temperature at the center of the vehicle. The temperature displayed by the control knob is for measurement at the vents themselves (not the center of the vehicle). The options in your second photo adjust that to now mean the center of the vehicle where you would be sitting. For this, the blower would circulate the cooler air faster with the intention of cooling the center of the car quickly, then reduce speed to maintain the temperature by the vents as displayed, and the center of the cabin is nicely maintained.
