The power button on the dash only turns off the display, I would like to have the screen itself collapse back into the dash while driving.

hmm....... on my MY18 A3, pressing the button does both; it switches off the MMI AND it retracts the screen into the dash!
Does the MMI screen retract at all on these cars? If not, then I suspect that it's a hardware issue (not a coding matter)

I can confirm on a 2020-S3 the screen will NOT retract with any press of the dash button: Various taps attempted 1) single tap (screen turns on/off) 2) long single tap nothing 3) two short taps nothing 4) two long taps nothing
My screen will retract and deploy with ignition cycle. The hardware will work, just not with the dash button.

hmm.......... OK, strange. If the display does have retract capability, then yes it likely will be a coding matter
As I have said, my MY18 A3 8V does retract whenever I press the button in the dash (regardless of whether the car is moving). If someone with a 8V/FF (2017-2020) version car wants to make a back-up of their MMI unit (i.e. the module @ address hex5F), I'm happy to compare the settings with the module in my car.
No guarantees of course, but maybe worth a try?

I think this may be country dependent. In the United States retracting the screens was regulated out because of the requirement to always have immediate access to the reversing camera for backing up. The belief was that the time taken to move the screen back up (or not let it go into the operational position) would restrict the value of the required reverse camera. So I think that as a result the screen will not retract when the car is operational, even if turned off. With the screen off, I believe if you put the car in reverse it, the screen will instantly come back on.
