I know on the MK5, you can switch engine types to use only the primary O2 sensor (no secondary), but the best solution is to get your car flashed using a tool like Eurodyne to ignore the MAF and O2 sensors. A race-car will pass a OBD2 SMOG test (but obviously not a tail-pipe test. You can have a "lean" tune for the tail-pipe test, then switch back to a race flash file afterwards. I have several tunes for my MK5 GTI so my car appears road legal even with the catalytic converter removed.

Your car has to be flashed for this. Eurodyne's Maestro7 does a good job at this.
