Hi! I'd like to start by saying that all of this has been tested on my personal Brazilian UP! TSi. It has fewer options than its Euro counterpart (e.g. no stop-start, no ESP, no cruise control etc), so options regarding these can't be tested by me, unfortunately.
The list might be small, because there's only what I could try on my car by tampering with OBDEleven GUI.
Unknown settings are unknown. If you know something new and you're sure about what it does, I can try on my car.
I'll try to add more as I try them.

01 - Make the steering wheel lighter (credits to ddfdedo )
> Go to Steering Assist (44)
> Long Coding
> Disable "Active return".
Done.
Your long code should be: 0000000001010000
Bear in mind that changes might take a day to take effect.
However some think that this might be way too light (i.e. it's basically "City Mode" while driving).
There's a middle ground between the original steering resistance and the lighter mod
> Do the same steps as above
> Also enable "ABS/ESP"
Your long code should be: 0000010001010000
Done.
I personally use the "middle ground".

02 - Disable ASR (Anti-Slip Regulation) / TC (Traction Control)
> Go to Brakes (03)
> Basic Settings
> Select "Deactivate Anti-Slip Regulation"
> Make sure your car is fully stopped, otherwise it will throw an error.
> Press and hold the toggle.
This will disable your ASR/TC, while keeping your ABS intact.
This will last as long as your ignition is on. Setting will be reset when the ignition's turned off.

03 - Change the lane-changing blinks (comfort blinks) to more than 3

> Set it to whatever you want the lane-changing blinks to be.
I personally use 4 blinks. Some people prefer 5 blinks, but in my experience, it seemed like it blinked too much and I wanted to turn to another road.

04 - Change the alarm horn for the stock horn

It is known for thieves that the Up! alarm horn is way too easy to access and disable.
This will make it harder for them to tamper with your car.

05 - Disable blinker lamp broken alert (stops fast blinking on dashboard)

> Lampenausfallerkennung Blinkleuchten
> Set it to Not Active
Useful if you have LED lights without CAN fix.

06 - Enable Tire Pressure Monitoring

> Set it to Yes
Actually there's no TPMS sensor on my Up, however I've been told it still works because the ABS system detects differences between wheel rotations and presumes it's a low pressure tire.
I might someday test it.

I find it useful to not attract attention when you unlock the car.
Same can be done with Akustische Rückmeldung beim Verriegeln (Quittierung), which is the alarm lock beep, however I personally like the locking acknowledgement, as I use it to ensure my car's locked when at distance (who has never been unsure if they really had locked their car?)
Disabling both essentially disables Alarm beep when locking/unlocking. Some people use this way because they have something else set up when double pressing the buttons, like rolling the windows up
