Anyone know if the dash and interior colors can be changed from the default blue (eco), red dash/white interior (comfort), red (sport) colors?

Yep, have a look at Interior Light General Settings -> Mapping FPA Profiles.
This assign the arbitary FPA numbers to arbitary ambient profile numbers It is a little bit fiddely to be honest but should give you some options

Ok I found those FPA profiles but none of it makes any sense. There are 6 profiles with some numerical value in them 1-7 except 6 but not in that order. What does it all mean? I changed some of them and it just does weird stuff, like it'll change the color on one of the modes, or make it so it stays the same as the previously selected mode. And what are those 6 profiles?? There are only 4 modes to choose on the car! Wish there was something straight forward like showing the mode and then a drop-down menu with the different colors. Even if it's numbers, and I have to go through them, I'll take that, but those FPA profiles make no sense.

It is how VW implemented it for their internal processes. There is no need and no use for descriptions, so they just documented it that way. Up to 6 FPA profiles prepared (there are more profiles prepared, but not all are enabled in standard Golfs). As the naming can change throughout variants (Hybrid, GT?, Alltrack), they did not name them there. Up to 16 predefined ambient presets, not all are used or have a practical use. Naming issue (Brands, Cars, ...) also applies here.
You can surely invest some minutes and figure out which profile name related to which profile and try out 16 presets and describe them. I think everybody interested in this will find that helpful. Or you decide to rant about it and demand other people to do this. I still hope you can enjoy your day!

A few minutes? I wish it was a few minutes. I spent probably 30-40 minutes and only did a small insignificant percentage of the possible combinations, some of which yielded pretty much the same results. There are millions of combinations available because changing any one number in the 6 FPA profiles can yield to a different result. It's unrealistic for anyone to go through all of those. I have done maybe about 15-20 combinations and neither of them even yielded a new color. Still stuck with the blue, red and yellow. I'm going to assume at this point that it's not possible to do what I was hoping to do.

I do not get your point there. I see 22 (6 + 16) iterations there, not 96 (6 * 16) and not even hundreds.
I actually did it myself to get rid of the yellow in individual, but skipped it in the end and used custom colors.
Maybe you need to switch fpa profiles / colors or play with the ignition to apply them, but I can confirm that these adaptions have an effect.

There are 6 FPA profiles and each can have values 1-16. Changing any of them to any value can/might give a different result. So that's 16 to the power of 6 possibilities...which is something like 17 million. When I said millions, I was being serious, wasn't a figure of speech lol Now granted, from the combinations I tried, there were some that yielded the same result, but you don't really know that until you try all of them, or at least a good percentage of them to figure out some trends. Quite a few of the combinations I tried changed it so that one of the modes would take the color of the previous one selected. So for example ECO would be red if you switched it from Sport mode, or yellow if you switched it from Custom mode. So I agree they do have some effect, but the way it's set up makes no sense, and appears to be very arbitrary. A more logical way would've been to have the modes corresponding to the actual drive modes (so FPA profile 1 is ECO, FPA profile 2 is Comfort, etc.) and then each value 1-16 or whatever they want to correspond to a certain color. But it doesn't. I've tried like 7 or 8 values on the same FPA profile and kept changing between blue, red and yellow, no other new colors.

Yeah, that limits the possibilities to 16 preconfigured settings which are distributed to up to 6 profiles.
Each of the 16 presets has the same effect on every profile. It does not matter how they are assigned, e.g. preset 2 is the same color on all profiles. That how i came to 22 settings in sum to try.
When none of the 16 presets are working out for you, I see no other option for you I am afraid

So were you able to get any other colors besides blue, red and orange? I changed the values on the first profile at first (without making changes to the others) from 1 to 8 or 9 I think and I never got a new color.

Yep. I would not insist if that was a vague guess. First was Eco if I remember correctly, but it has been more than two years, so I would not bet on it.
You can use the Live Data of the ACC "Driving Profile Selection" to check which driving profile presents which number

In my case, (golf mk8 gte) i wanted comfort mode to have blue ambient lighting by default.
I just needed to set profile 1 to 2, and set profile 5 to 1.
